Dave, I believe the reasoning is because that is how the plates are supported when they grind/lap them to their final finish. Best to keep everything same - same, just in case.

Mine is a smaller plate as well, and doesn't get moved around - but if the manufacturer says mount it on the three points, that's what I do.  Blush 
No, it's not sitting on the angle iron, or touching the sides. It only serves as a 'fence'. There are two cross bars below that the plate actually sits on, on the airy points only.  Thumbsup
