Personally, I'd rather have a medium and a fine, rather than the coarse and medium that most grinders have.  I don't usually remove a lot of material, but I want to be able to put a really nice edge on tools.  As a result, I rarely use the coarse side, and sometimes have to hand finish my cutting edges.

Excellent points. What one needs for deburring angle iron etc to be welded up is quite different from sharpening tools. The 8" grinder will also give you better cutting speeds. Let make one more suggestion, buy a true wheel dresser, one that also makes the wheel run true/balanced. When sharpening cutting tools the difference is amazing.
