Would it be possible to use something like this Hardinge Emergency Collet to make your own adapter?

Not a cheap solution but you could grip this straight shank ER40 collet chuck in a 1" 5C collet.

Ed, The Maritool solution would work were it not for the very small "through hole".
Darren, don't worry, I could never ask a buddy to pay attention when I can't. What were we talking about?  I've decided to abandon the quest for an ER solution in favour of making a different spindle for the end mill grinder and mounting a 3 jaw chuck on it. I'll 'splain further, with pics, when I get a round toit.
